Easy recipe: Mandy’s mashed potato fritters

We show you how easy it is to make delicious potato fritters that are crispy, perfectly spiced, and that even the pickiest of eaters will love! They make a really delicious side dish or snack dipped in your favorite dipping sauce, or in between a burger bun. They are so good.

Ingredients
For making the mashed potato, add 1 pinch of salt and 500g of potatoes peeled.

For the fritter mixture, add 1 tablespoon of baking powder, 100g plain flour, 4 spring onions finely chopped, 150g sweetcorn kernels, 100g peas, 225g cheddar cheese grated, 1 tsp smoked paprika, 1 tsp garlic powder, 1 egg beaten, salt and pepper to taste, and 2 tbsp vegetable oil.

Instructions
Making the mashed potato. If you are using leftover mashed potatoes, then you can skip this stepBring a large pan of salted water to a boil and add your potatoes for approximately 10 minutes, your potatoes should be soft but not too soft. Drain all the water from the potatoes, mash them until they are smooth, and set them aside to cool.

Making the fritters. Add your mashed potatoes to a large bowl, then add baking powder, plain flour, spring onions, sweetcorn kernels, peas, grated cheese, smoked paprika, garlic powder, beaten egg, and kosher salt and pepper. Stir to combine.

Divide your potato mixture equally and use your hands to form balls, then squash them into patty shapes.

Heat olive oil on medium heat in a large nonstick frying pan, then add the fritter batter to the hot oil. Fry each side for 2-3 minutes until they are golden brown.

Depending on the size of your frying pan, you may have to repeat the process until all of your potato fritters are cooked. Once cooked, place your crispy potato fritters on kitchen paper towels to soak up excess moisture.
