This recipe takes ordinary rice and turns it into a taste sensation. The combination of aromatic coriander and zesty lime juice adds a refreshing and vibrant twist to every grain.

Ingredients

185g Rice long grained, rinsed and drained, 355ml Water, 3 tsp extra virgin olive oil divided, 1 tsp lime zest, 1 clove garlic minced, 8g coriander finely chopped, 1½ tbsp fresh lime juice, and ¼ tsp salt.

Instructions

Add rice, water, and one teaspoon of olive oil to a lidded saucepan. Bring to a boil and cover; reduce the heat to a simmer. Simmer according to your rice packet instructions, approximately 18 – 20 minutes. Once cooked, take it off the flame and keep it covered for 5 minutes.

Uncover the saucepan; using a fork, fluff the rice up, and add lime zest, garlic, the remaining olive oil, coriander, lime juice, and salt, and stir to combine thoroughly. Serve immediately and enjoy!
