Ingredients
For the Italian dressing
60 ml Extra virgin olive oil, 2 tbsp white wine vinegar, 2 tbsp lemon juice, 2 cloves garlic minced, 1 tsp honey, 1 tsp dried oregano, ½ tsp dried parsley, ½ tsp Dijon mustard, ½ tsp dried thyme, ½ tsp dried basil, ¼ tsp sea salt, and freshly ground black pepper to taste.
For the pizza salad
285g Spring mix salad or your favorite salad bag, 150g cherry tomatoes halved, 115g veggie pepperoni slices, 70g black olives pitted and halved, ½ bell pepper thinly sliced, 225g mozzarella pearls, 20g fresh basil lightly packed and torn, 50g vegetarian Parmesan cheese, and 60g croutons.
Instructions
For the Italian Dressing
Whisk together olive oil, white wine vinegar, lemon juice, garlic, honey, oregano, parsley, Dijon mustard, thyme, basil, salt, and black pepper in a small bowl.
For the Pizza Salad
Add the salad to a large bowl, then add tomatoes, veggie pepperoni, black olives, bell pepper, mozzarella pearls, fresh basil, and shaved vegetarian Parmesan cheese; then, when ready to serve add croutons, and drizzle Italian dressing over.
