Combining the cosy, comforting flavours of apple pie with the creamy richness of cheesecake, with the most delicious Biscoff biscuit crumb crust.

It’s a real treat and there’s a good chance that your friends and family won’t have tried this recipe before.

Ingredients

For the Biscoff crust

235 grams Biscoff biscuits and 56 grams butter melted.

For the Cheesecake

570 grams cream cheese, 150 grams sugar, 2 tablespoons cornflour, 1 tablespoon vanilla extract, 1 lemon zested and juiced, 2 eggs, and 115 grams sour cream.

For the Apple Filling

1 apple sliced, 3 tablespoons brown sugar, and 1 teaspoon cinnamon.

For the Streusel Topping

125 grams flour, 60 grams rolled oats, 55 grams butter melted, 55 grams brown sugar, and 1 teaspoon cinnamon.

Instructions

Preheat the oven to 180ºC.

Line a springform pan with baking paper (7-8 inches).

In a food processor, crumble the Biscoff biscuits and add the butter and blitz until it becomes a grainy consistency. Transfer the mixture to a baking pan and press down to form the crust. Bake for 10 minutes.

In a large bowl, combine cream cheese and sugar until soft and creamy. Add the cornflour, vanilla extract, lemon, eggs, and sour cream and mix well.

In a separate bowl, combine the sliced apples with sugar and cinnamon.

In a third bowl, combine all the ingredients of the streusel topping.

Now, arrange the cheesecake by layering the cheese filling and the sliced apples until you reach the top.

Cover with the streusel topping and bake covered with foil for 35 minutes. Remove the foil and bake for another 15 minutes. Turn off the oven and let the cheesecake cool inside of the oven until it reaches room temperature.
