A new family-run food business serving up creative takes on traditional British potato hash has opened at Five Valleys.
Hash Hub is the latest venture from owner Simon Ayley, whose hospitality career began at just 16 when he started working in the kitchen of an à la carte restaurant in his hometown of Kent.
At 17, Simon left home to pursue his career, working in Berkshire and Corsica before moving to London, where he joined a high-end private members’ club. He later spent a year travelling around Australia, combining his love of cooking with exploring the country.
After meeting his partner Sarah, the couple moved to Cheltenham, where they ran a successful bed and breakfast for 11 years.
Simon has since worked in a variety of roles across the hospitality sector before deciding the Five Valleys Food Hall was the ideal location for his latest venture.
The idea for Hash Hub developed after Simon explored a number of different food concepts before settling on something distinctly British – potato hash.
The menu puts a fresh spin on the comforting classic, with customers able to choose from a selection of toppings including homemade sausage, house dry-cured bacon and traditional corned beef.
Simon said: “Hash Hub is all about taking a familiar British favourite and giving it a fresh twist.
“Potato hash is simple, comforting food, but there are so many ways to make it exciting, and that is what we want to bring to Five Valleys.”
Five Valleys Centre Manager Mick Grundy welcomed the new business.
He said: “We are delighted to welcome Simon and Hash Hub to Five Valleys.
“Simon brings a wealth of experience from across the hospitality industry, and Hash Hub is a fantastic concept which offers something different for our visitors.
“We’re looking forward to seeing the business open and wish Simon every success with his new venture.”
