Stroud’s popular Five Valleys Food Hall is welcoming a delicious new arrival this month – the much-loved Vinnie’s Mac and Cheese. 

The family-run business, founded in 2021 by husband-and-wife team Paul and Katie Vince, will be serving up their signature creamy mac and cheese with an irresistible range of toppings from one of the hall’s three brand new food units.

All three of the new units have now been let, with further exciting announcements to be made soon, as Five Valleys continues to grow as one of Gloucestershire’s most vibrant food destinations.

Already home to a fabulous array of local foodie businesses, offering everything from artisan baked goods to sushi street food and specialty coffee, the Five Valleys Food Hall is the perfect spot for Vinnie’s Mac and Cheese to join the line-up.

The Vinnie’s Mac and Cheese menu features their indulgent classic mac and cheese alongside a vegan version and gluten free options – all made fresh to order using quality, locally sourced ingredients wherever possible. 

Customers can enjoy their mac with a tempting selection of popular toppings, including crispy onions, bacon bits, and seasonal favourites such as pigs in blankets, the ultimate comfort food treat.

Paul and Katie have built up their business at local festivals and events and are now taking on their first permanent base.  Sustainability has been a key focus for the couple since day one.

“When setting up Vinnie’s Mac and Cheese, it was important to us as a family to really consider sustainability and make it a main focus for the business,” said co-founder Katie. “We know we can’t change everything overnight, but we’ve started as we mean to go on.”

Paul’s 35 years of experience in carpentry and building has also played a key role in Vinnie’s success. 

He designed and fitted out their original trailer to a high standard, combining craftsmanship with a love of good food and great service. He’s now working on the new Five Valleys unit ready for opening at the end of November. 

Katie added: “We’re absolutely thrilled to be joining the Five Valleys family. We can’t wait to serve our classic mac and cheese – with all the toppings of course – to new customers right here in Stroud.”

The team at Five Valleys are excited to welcome them to the food hall – the centre is also currently developing the brand-new Home of Vintage next door to the Food Hall. 

Centre Manager Micki Grundy said: “Vinnie’s Mac and Cheese perfectly captures what Five Valleys is all about, local people doing what they love, with great quality food and community at the heart of it.”
