I was speaking with an American friend recently and they told me about an amazing broccoli casserole that they had made.
It wasn’t a casserole like I’d tried before but I was intrigued and needed to give it a try.
I was not disappointed and I think you’ll love it too. It’s full of fresh broccoli flavor but with a delicious cheesy sauce and a crunchy topping! Hope you enjoy it!

Ingredients
550g Fresh broccoli florets, 225g mayonnaise, 300g condensed mushroom soup, 1 tsp paprika, 2 large eggs beaten, 55g butter melted, ½ onion thinly sliced, ½ tsp kosher salt, ¼ tsp black pepper, 170g mature Cheddar cheese grated, and 115g cheese crackers (like Ritz) crushed.
Instructions
Bring a large pan of water to a boil and reduce to a simmer, then place a steamer basket with broccoli on it, cover it with a lid, and steam for 5 minutes, remove from the heat and chop into bite-sized pieces.
Preheat your oven to 175°C.
Place the broccoli, mayonnaise, mushroom soup, paprika, eggs, butter, onion, salt, and pepper into a large mixing bowl and mix well to combine
Then add 100g of cheese and mix well to combine. Transfer into a buttered casserole dish and add the remaining cheese, and crackers evenly to the top of the broccoli mixture.
Bake for 40 minutes. Remove from the oven, serve while hot, and enjoy!
