Delicious Cheesy Scalloped Potatoes
It’s getting cold now, so it’s time for warming comfort food, and what’s better than cheesy scalloped potatoes? Thinly sliced potatoes layered with a creamy cheese sauce and baked to golden brown perfection; this is one of my favourite side dishes.

Ingredients
4 Tablespoons butter divided, 4 tablespoons plain flour, 590 ml milk, ½ teaspoon salt, 225 grams Cheddar cheese grated, 6 medium potatoes peeled and sliced, and salt and black pepper to taste.
Instructions
Preheat your oven to 175°C and grease a medium-sized casserole dish.
In a pan over medium heat, melt the butter and stir in the flour. Then, slowly whisk in the milk and season with salt. Reduce the heat to low and cook the sauce until it’s smooth, giving it an occasional stir. Then, slowly stir in half the cheese.
Place ⅓ of the sliced potatoes in an even layer in your casserole dish, season with salt and pepper, and then pour ⅓ of the cheese sauce evenly over them. Repeat the layers and top with cream sauce. Scatter the remaining cheese over the top, cover, and bake for 30 minutes. Remove the cover and bake until the potatoes are soft, approximately 1 hour. For an extra golden topping, put them under the grill for 3 – 4 minutes.
Let the potatoes stand for 5 to 10 minutes so the sauce thickens. Serve and enjoy.
